
Our Heroes
In the Chandlery Restaurant our suppliers are vitally important to us and we endeavour to look after them and promote them as much as possible. We have built up excellent relationships so that John can specify exactly what he is looking for in terms of quality, colour and taste.
Oakes Marine: Hand dived Scallops from Loch Sligachan. These king scallops are wild ranched in Loch Sligachan and then harvested by a diver.
MV The Golden Rule: Langoustines from this fishing boat are caught around the waters of the Minch and landed daily into Portree Harbour. They are then delivered immediately to the Kitchen for the evening’s service.
Glendale Salads: All our salads for the Chandlery Restaurant come from this grower on the West Coast of Skye – organic leaves, edible flowers, fancy leaves, herbs, vegetables and soft fruit. All this produce is grown organically to Soil Association standards, and varieties are selected for flavour, texture, shape and attractiveness.
Isle of Skye Fresh Produce: This company also provide us with herbs and leaves, grown at Orbost on the West of Skye. They place great store on freshness and quality.
Bracadale Crab: This delicious fresh crab meat is caught by local boats in Loch Bracadale. The crabs are wonderfully fresh and of the highest quality, giving an exceptionally natural taste. Loch Bracadale Crabs is a small, family run business situated on the shores of Loch Bracadale, near Dunvegan, on the Isle of Skye. The purpose built unit specializes in the production of luxury, hand picked, 100% crabmeat. Caught locally, the crab is cooked, prepared and packaged on the premises. Production started in the summer of 1999 and the firm now boasts some of the finest hotels in Scotland amongst its customers.
Skye Berries: This is a small company based in Edinbane. The grower uses organic methods to produce blueberries, raspberries, red, white and black currants, strawberries and brambles.
Skye Fruit and Fungi: This new mushrooms grower is now producing birch log grown Shitake mushrooms, which John has begun using in his new creations . Skye Fruit and Fungi are to expand into cranberries, blueberries, cloudberries and loganberries later this year.
Lusta Fungi: Soil Association Organic Shitake, Lions Mane and Oyster Mushrooms.
Glendrynoch Garden: Deirdre Peppe from Glendrynoch supplies us with delicious watercress grown in hydroponic channels fed by their own spring water.
Early Bird Enterprises: Gourmet sausages, venison, ham, bacon and mutton. (All grown free-range).
Isle of Skye Oysters: Located at the foot of the famous Cuillin Hills at the head of Loch Harport, Isle of Skye Oysters is a family run business which prides itself on growing and supplying the best shellfish you will ever taste. John steams the oysters and sets them on a citrus salad with a shallot and balsamic dressing.
